Chicken & Salsa Veggie Wrap

Wraps are the most versatile pack-it-all-in foods. Here's one of my creations ... and I served it with baba-ghannouj

The dish described below I made for two people. It is quite filling and very yummy.

A fair warning, though, because the wraps are so packed with veggies and salad it’s just impossible to make a neat pretty wrap parcel out of that. Plus with the dip, all in all, it makes a very messy finger licking dish.

First of all marinade the chicken. This marinade is really yummy, one that I have developped over the years. Again, with me, nothing is properly measured out, so here are the approximate ingredients.

Ingredients:

Chicken breasts,

squeezed garlic,

lemon juice,

olive oil,

dried or fresh chillies or chilly seasoning (not finely ground but coursely chopped),

cinnamon finely ground,

cumin powder finely ground
(sometimes I add a little ground cloves, and other exotic spices),

a small amount of salt,

and finely chopped fresh flat leaf parsley and/or fresh correander,
which I forgot to add to the picture here.

By the way, this is also a very impressive BBQ marinade. Make sure that you leave the meat in the marinade for a long time, my optimum is to let it marinade over night.

I cut the chicken breasts into strips as then it will be easier to add it to the wraps later on.

Here are my chicken pieces in their marinade. I just laid them out on the chopping board for you to easier see them in their marinated state – later I will just grill them.

I keep them in their marinade either in a container with a lid in the fridge, or if I have a lot of meat, especially bulky chicken leges etc. for BBQs I pop it all into a leak proof bag which is so much easier for the marinade to be squooshed around rather than turning the meat over in a container and spooning over the marinade regularly.

Next, here are the ingredients for the Salsa to drizzle over the the packed wrap for later on. Again these are approximate ingrediets, and don’t forget some olive oil, like I forgot to add to the picture. Be creative with the ingredients and the amounts, then chop everything up really finely.

So then here is what you can pack into your wraps. Loads of salad, raw chopped veggies (carrots, broccoli, cabbage, etc.), red bell pepper, sprouted seeds, non sprouted seeds, pumpkin seeds which are full of zinc amangst other things. I also added some olives, and of course the salsa in the dish and the grilled chicken. By the way, I have at times added to this mix slices of avocado, spicy chorizo, slices of mango, and nuts.

And here is the complete assembly of your little feast together with the wraps and the home-made Baba Ghannouj – or home-made Hummus – to dip in the ‘rolled’ stuffed wraps.

Did I say it’s a messy meal?? you better believe it. For this one, forget about cuttlery and fine manners, just dive in with your hands and lick off your fingers.

Oh a bottle (or two) of chilled dry white wine really goes well with it!
